Domaine Vacher Sancerre
Sancerre
Smoked salmon or lightly smoked fish, mushroom tarts (especially with goat cheese), or even subtle Asian-inspired dishes with ginger, lemongrass, or light spice—the acidity refreshes and balances
On the nose, it opens with bright, expressive aromas of white fruit (green apple, white pear, sometimes white peach or apricot) and citrus (lemon zest, lime, grapefruit, yellow lemon), layered with subtle herbal freshness (fresh herbs, gooseberry, or linden floral hints) and distinctive minerality (limestone, dry stone, chalk, a light flinty or smoky touch, and racy wet-stone notes).
The palate is lively and full-bodied for a Sancerre, starting with vivacity and richness that combine into a harmonious mid-palate—showing roundness from white peach or orchard fruits, balanced by sharp, chiseled acidity. It delivers clean, energetic structure with a tensile, salivating freshness, subtle smokiness or flint in the background, and a persistent, refined finish that's long, chiseled, and invigorating—often leaving a lingering citrus-mineral interplay and a touch of salinity for finesse. The domaine, family-run for 11 generations and spanning over 15 hectares (with about 12 hectares dedicated to Sauvignon Blanc), is certified in Organic Agriculture since 2023 and holds High Environmental Value certification, reflecting a strong commitment to sustainable and terroir-focused farming. Vineyards are planted across the appellation's three signature soil types for a balanced blend: approximately 45% on Terres Blanches (soft, chalky-clay soils that yield full-bodied, rich wines), 45% on Caillottes (pebbly-chalk soils producing fine, fruity expressions), and 10% on Silex (flinty soils adding verve, openness, and minerality). Vines average 15–20 years old, with pruning via Simple Guyot and cultivation allowing wild grass in 60% of the Sauvignon vineyard for natural biodiversity.
