Fresh salmon cakes served alongside a mixed green salad with candied pecans and goat cheese pair wonderfully with a vibrant Pinot Noir. The wine’s bright red fruit and subtle earthiness complement the savory richness of the salmon cakes, while its natural acidity balances the creamy goat cheese and the sweet crunch of the pecans.
Ripe cherry, raspberry, and pomegranate—layered with notes of rose petal, baking spice, and a hint of forest floor. On the palate, the wine is refined and expressive, with balanced acidity, silky tannins, and a long, graceful finish. This 2022 release is a true reflection of Oregon’s terroir and a standout year for Pinot Noir.
The Kate Arnold Oregon Pinot Noir is crafted from carefully selected grapes grown in Oregon’s renowned Willamette Valley, known for its cool climate and diverse volcanic and sedimentary soils that perfectly suit Pinot Noir. Harvested by hand in late September to early October at optimal ripeness, the fruit undergoes meticulous sorting to ensure only the highest quality clusters make it to fermentation. The grapes experience a cold soak before fermentation in small open-top fermenters or stainless steel tanks, using either indigenous or carefully selected yeasts to enhance the wine’s expression of terroir. Extended maceration lasting around 10 to 14 days helps extract delicate tannins and complex flavors without over-extraction. The wine is then aged for 10 to 12 months in French oak barrels, with about 30–40% new oak, lending subtle spice and vanilla notes while preserving vibrant fruit and freshness. Finally, the Pinot Noir is bottled without filtration or fining to maintain its texture and aromatic intensity.
